I grew up on this delightfully simple fudge recipe. The conversion to dairy-free was simple. While there are other fudge recipes out there, this is my absolute favorite one, and I was so happy that the dairy-free version tastes just as good as the dairy version I love.
Ingredients

12 - 14 oz dairy-free chocolate chips or carob
1 Can Sweeten condensed coconut milk
1 Tsp Vanilla
Optional: Nuts
Instructions
Mix and microwave for 1 ½ minutes. Stir until blended. Add 1 Tsp vanilla. add chopped nuts (optional), spray the pan with cooking spray or use dairy-free butter to grease the pan. Pour in fudge and refrigerate.
This fudge can also be made over the stovetop in a small/medium-sized pot. Cook the fudge until it starts to wrinkle on top.
Carob tip: If you have cocoa butter, add just a little, and the fudge will taste a little more chocolate-y.
